I'd like to play against my friends, but we're never lucky enough to be matched by the quick game system. Is there some way to do this that I have completely overlooked? If not, it would be much more fun to play my buddies via bluetooth or something like that.

Selecting a specific opponent is actually being worked on for v1.26. It's currently out at the test server, but I think it still has some issues. For more info about the test server, you can read this post.
I tried to match directly with a friend via Game Center. It appears as though it should work, but after the connection is made and we both are at the "ready" status, selecting "Play Now" only takes us into the app without starting our match. So...I guess the feature doesn't work at the moment...I hope this is something that will get set up for the next update.
I'm looking forward to this feature also.
