Cards in the Merchant can get 'out of stock', and as there are a lot of people wanting Erikayou wil have to be patience.

All cards are countable? Is this fixed amount or not?
I'm not sure what you meant by "countable", but as Maldazar has stated, it does re-stock (you just have to be lucky). Kyle has admitted that the merchant re-stocking is an issue and something they will improve, hopefully sooner rather than later.
