Wtf everyone? Item-destruction cards are for noobs.

I am pretty surprised there aren't any anti-item traps out there.

Quite true. Item destruction is much more of a side thing to put in, ally removal is generally more key, cause most heroes are going to go about trying to win games with allies, not weapons. There are solo decks that make more use of weapons of course, but they are quite less common.Originally Posted by Index

Be careful what you wish for: super efficient ally removal is a big part of the reason we mostly see the same super efficient low-cost allies (and rarely see the big flashy fatties).
Building decks around items and attachments is already hard enough (because of their inherent Uniqueness), there's no need to complicate it further.
Personally, unless I'm playing a control deck, I don't carry a whole lot of item destruction (if any) for the reasons you listed (too situational, not even that good when it's good, basically only winmore). Sometimes I get blown out by a Voice of Winter, but it's rare enough that I'm willing to take the risk (and they will have 4 VoWs to my two LLNs anyways).
Although plenty of exceptions, I would say for that for many of the garden-variety QM matches, the fate of the victor/loser will be known by about Turn 6.
