Yep, when you are defending you are playing with your defending heroes and when you are attacking with your attacking ones.
So in your case, against Vyz you play with Banebow, Logan, Serena and against Hammy with Boris, Loest, Moonstalker.
The only hero that you can change is Banebow with another Hunter but for one game only in the Bo5! and you don't have to let your opponent know about this beforehand.

well, i did attacked him and we ended up with an amber vs loest matchup which i won anyway.

i'd like a game 1 win obviously, and being able to decide which hero of the his proper ones my amber was matched up against.

Ok you get the game 1 win of course and he has to let you know which of his 3 defending heroes is "used" in that game. So he can't use him for the next 2 games.

Edit: I am sorry Vyz but I can't let you choose the hero, because it would be too powerful to do. If you both agree I can give you a random choice.

Edit2: Actually random choice is the "best" way I think. So if you didn't start something already, let me know and I will post the hero.
