Why is it that if I first lay a death trap, then snare trap, then comes a 1cc enemy ally, my death trap gets activated. Why don't they make it that I could choose what trap to activate or at least make snare trap activate for lower cost allies?

It can't happen, it's the game's rule, which is called SRO (i think). Which means the first card you played will activate first, if able.
Had you played a snare trap first and then a death trap, and the opposing player casts an ally with cost 4 or more, then the death trap would have activated even when you played a snare trap first.
