I saw someone use Apple cider vinegar instead(it is on a cupcake though)

I've seen that used too. Mostly in other variants of cake where they're trying to keep it moist, but lighter. Usually have to add more baking powder to compensate, thus mayo is a better alternative.

Beside mayo in cakes, you can make nice caramel-sweets by adding razor bale inside, it's so.... Oh, wait... That was for Halloween... Nvm... (｡-_-｡)
