We start the game at night because if a person is lynched at the start, it will be unfair for that person.

I always prefer starting Mafia at night, because the first person to die...that sucks. But on the other hand, if you lynch someone with literally NO information (the police did not check anyone, no one has been killed, etc) then that's no better than just rolling a D20 and seeing who gets killed. Starting at night lets everyone with powers use them and provides relevant information to go on.
